Peanut Dipping Sauce:

  • 1/4 cup peanut butter
  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 2 tbsp water (or adjust for desired consistency)
  • A pinch of chili flakes or a dash of sriracha for heat (optional)

  1. Prep Your Vegetables: Julienne the carrots, cucumber, and bell peppers. Tear or cut the lettuce into large pieces, and gather the mint, cilantro, and basil leaves.
  2. Soften the Rice Paper: Pour warm water into a shallow dish, and briefly dip each rice paper wrapper until it becomes soft and pliable. Lay it flat on a clean surface or damp towel.
  3. Assemble the Salad Rolls:
    • Place a few pieces of lettuce in the center of the softened rice paper.
    • Add a small handful of shredded carrots, cucumber strips, red bell pepper, and any other vegetables you’re using (like avocado, cilantro, or basil).
    • If you’re using the pre-soaked vermicelli noodles, add a small amount to the center.
  4. Roll It Up:
    • First, tuck the bottom edge of the rice paper over the filling.
